Highways are designed to let traffic pass around the centre of your city for the most part.
All outside connections are available (4 for each, 2 for shipping).
Fields that are a mix of ore/oil and fertile can be used for both equally well.
If you like the map, but are not a fan of field painting, consider BloodyPenguin’s "No Radioactive Desert And More!" Mod to turn fertile colour etc. off.
