Despite what you’d think, a coroner Ford Crown Victoria actually exists in real life. LA County purchased them as part of a fleet program and sends them to assist in investigations. While you could fit a body into the trunk, ideally a van would be dispatched for that purpose.
Use Service Vehicle Selector or Service Vehicle Manager (my preferred utility) to set deathcare vehicles types for your mortuaries.
